Potato Soup
A simple potato soup, ready for embellishment
Ingredients
- .5 kg Potatoes, diced
- .25 kg Broccoli, chopped
- 75 g Butter
- 75 g Flour
- 250 ml Milk
- 750 ml Vegetable broth
- 25 g chopped Green Onions
- 125 g shredded cheese (Cheddar)
- Salt and Pepper to taste
Process
- In a medium pot over medium-high heat, boil Vegetable broth
- Add Potatoes, cook for approixmately 10 minutes.
- In a second pot, add Butter and Flour. Cook over medium heat for 5 minutes
- Add Milk and Vegetable mixture to butter and flour pot with Broccoli and Green Onions
- Cook soup over medium heat for approximately 10-15 minutes
- Add cheese a little at a time until cheese is melted
- Add salt and pepper to taste
- Serve hot
Notes
This soup has a lot of options.
You can make it exactly the same way by substituting the broccoli for more potatoes.
You can add meats, other vegetables, onion, garlic, different cheeses, no cheeses.
