Potato Pancakes
Simple potato pancakes with a lot of flexibility
Ingredients
- Leftover Mashed Potatoes (about 3 servings)
- 50-100g flour
- 125 ml milk or cream
- 1 Egg
- salt and pepper to taste
- light oil (rapseed, canola, etc.)
Process
- Mix leftover mashed potatoes, 50 g flour, eggs, and milk in a bowl until it reaches a consistency of a thick pancake batter
- Add salt and pepper to taste
- In a lightly oiled pan, pour approximately 125 ml batter and fry until bottom is brown
- Flip and cook until other side is golden brown
- Repeat last two steps until all batter is used
Notes
These are the blankest of slates. Add vegetables or other ingredients for a delicious change.
Top with cheese, quark, sour cream, butter, cream cheese, or anything else you would put on a baked potato.
Also delicious plain.
