Potato Pancakes

Simple potato pancakes with a lot of flexibility

Process

  1. Mix leftover mashed potatoes, 50 g flour, eggs, and milk in a bowl until it reaches a consistency of a thick pancake batter
  2. Add salt and pepper to taste
  3. In a lightly oiled pan, pour approximately 125 ml batter and fry until bottom is brown
  4. Flip and cook until other side is golden brown
  5. Repeat last two steps until all batter is used

Notes

These are the blankest of slates. Add vegetables or other ingredients for a delicious change.

Top with cheese, quark, sour cream, butter, cream cheese, or anything else you would put on a baked potato.

Also delicious plain.
